"We have customers who have never eaten Indian food before coming here. And now, they don't eat anything else!" says Arvin Singh, who co-owns Amar's Indian Feast with his wife, Aman. Arvin prides himself on cooking authentic Indian food with herbs and spices specially imported from Australia or his native India.
Located in the food court of New Westminster's popular Royal City Centre shopping mall, the menu items at Amar's Indian Feast change every day. "We have over 100 dishes that we cook over time," says Arvin. "We make eight items every day, four with meat and four vegetarian dishes. We have customers who eat lunch here five or six days a week, so it’s important that they can experience different dishes when they come."
Chicken and lamb curries are particular favourites, and can generally be found on the menu along side potato and cauliflower curry for vegetarians. "We make our food fresh every day," says Arvin. "Everything is made from scratch using fresh ingredients. We use rice imported from India, while our flour is all made in Canada." Whenever possible, Arvin likes to buy his fruit and vegetables from local suppliers.
