Beyond the oversized stuffed pig hanging from the rafters, it’s the Blue Ribbon awards, the bar’s queue of craft beers, and the rows of tables and booths that make up the Lower Mainland’s only Kansas City-style BBQ joint – Steveston’s Hog Shack Cook House.
Along with some lip smacking, fall-apart tender ribs, owners and lifelong friends, John Lim Hing and Allan Yeo, serve up a good dose of Southern hospitality north of the border.
“We replicate the Kansas City flavours to be as authentic as possible,” says John, who spent months traveling the southern US sampling its homespun BBQ meats. “Our cuisine stays true to those southern roots.”
Their slow-cooked American-style BBQ draws crowds of locals and visitors alike.
As John starts to explain what the basis for really good Kansas City-style barbecuing is, he stops a few times to greet customers with a nod or friendly hello.
“The gateway to barbecuing everything is the smoker … the pulled pork, for example, is slow cooked in apple wood and hickory for 12 to 14 hours at 225 Celsius,” adds the Pacific Institute Culinary Arts graduate.
